Mock Re-Fried Beans in Tomatoes
4 large Tomatoes
(different colors or varying degrees of ripeness)
RAW Veggie Dip
1/4 cup raw pili nut
1 small avocado
juice of 4 calamansi
1 large clove garlic
2 Tbsp water
1/4 cup diced cucumber
1/2 tsp finely grated white onion
4 sun dried tomatoes, rehydrated and minced
Puree everything EXCEPT the sun dried tomato. Add that in at the end. Serve with
veggie sticks like carrots, celery and singkamas.
Kailan Salad
1 small bunch Kailan (Broccoli Leaves)
3 tablespoons olive oil
juice of 1 lemon
1 large clove garlic
2 Tbsp Braggs Aminos
2 kiwis (1 kiwi mashed the other 1 for presentation)
1/2 small red onion
2 tablespoons walnut
Stack the broccoli leaves, a few leaves at a time and cut into very thin ribbons. Place in a large bowl. Using your hands, massage and squeeze the greens until it begins to wilt. Add the remaining ingredients. Let it sit for a few minutes and place in the middle if the plate with kiwi slices. Garnish with nuts.
Chocolate Chia Pudding
This pudding is chocolatey, thick, delicious... and has a nice frostiness from the ice! I like to top it with raw cacao nibs and dehydrated coconut flakes
Ingredients:
2 tablespoons Chia Seed 1 cup Water 1 cup Ice Cubes 3 tablespoons Cacao Powder 2 tablespoons Lecithin Granules 1 tablespoon Yacon Syrup Vanilla extract to taste
Shake the chia and water together in a glass jar and then set aside for at least 10-minutes, allowing the chia to swell.
Blend all ingredients together until smooth and creamy. Tip: Let the chia soak in the water overnight and then whip it up in a jiffy for breakfast!

3 tbs sesame seeds
2 tsp. lemon juice
3 tsp. minced sweet onion & 1 clove fresh garlic
2 tsp. chili powder or 1 tsp. cayenne
1 tsp. cumin powder
1-2 dates pitted
Sprinkle of pink salt on tomato
Cilantro for garnish
